For Girls Only...wink wink

GIRLS' CATCHING UPS....


I've been very busy for the past 2 weeks. Busy planning and preparing for my 1st ever reunion with ex-LLB IIUM or girls' get together as my husband prefer to call it. Now after 2 days of resting, no cooking no baking, no blogging also, i'm now ready to indulge myself in this intoxicating hobby called baking hehe... today i plan to fulfill my daughter's classmate's dream of having my baked cheesecake by herself. no more mengicak from my daughter eisya which i think not sufficient for her. She's actually my 1st customer! hehe... Eisya as sales exec...hmm should I start my new profession? Don't think so... cook/bake and write suit me more.

After I came back from my reunion, my head keep provoking me to write about my memories back in college. Actually the idea of writing it came from marniza. I think her brain storage system is better than me.  Wiwi's also. I know this project won't be easy. Recalling those memories from my head requires a very long time. Part of the reason is that 99% of photos taken during that time have evaporated or vanished to thin air or water as flash flood swallow all my memories. Another reason is that I don't know where did I store all those stories from  1992 until 1998 inside my brain. Now is the time to collect all those memories from my close friends jeeja, wiwi, jas, marniza and others, so that i can compile it and write a journal or a story book. I thought of doing it Roald Dahl style. Short, sweet and simple.

As I wrote this, i realized that my draft has been here for more than a week..hee..what a lousy blogger la...Today is the 14th Zulhijjah...that's mean it's been 4 days since i got daging korban...For 4 days straight, I must come up with different beef recipes. For instance, the first day of aidiladha, I made beef steak jamie oliver style.I pan-seared the cuts and then put some butter for the extra umph... it was superb. I made 2 sirloin and 2 T-bone steak for dinner. the side dish was only boiled and seared potato with the steak juice. The korban beef taste like wagyu beef  . Serious. I think it's because the cow died in iman...Alhamdulillah...

So this is my steak! (with my thongs and my fingers..)

The second day, i made fettuccine with bolognese sauce.. this time i used boiled beef  and then minced it as opposed to the usual way of cooking bolognese sauce using raw minced meat. Then i add into the mixture of thin sliced button mushroom, canned whole tomato, chopped onion, garlic cooked in olive oil. Sprinkled with course black pepper, oregano and basil leaves and seasoned with salt and sugar. That's Nita's Kitchen's version. My kids loved it and that's all i cared about.

And on the third day, which is today, my daughter as always, asked for "Mak Andak Beef". The name's derived from the owner of the recipe. My husband's aunt of Kuala Selangor. A very simple yet delicious beef dish. Apart from salt and sugar, it has only 4 ingredients. Thin sliced beef, homemade cili boh, sweet kicap and blended rose onion. The method? Wait until I get the picture today.  I hope there still left for me when i come home today...because i have to fast for 8 hours for blood test this evening. Pleaseee....leave some for mommy..

Rasuk and BTS cake..

It hits me last night that our malay movie just cannot go (bunyi kelate sikit).. I watched a so called horror movie Rasuk hoping that it's as good as or rather as seram as Ju On or at least as Khurafat but to my total disappointment it was like watching  homemade youtube video. Paling menyampah ada doktor asik ketawa terbahak2 sepanjang masa said it's good to release tension... Turns out that the doctor was sexual maniac... He raped his patient in his clinic. That was so unnecessary and mencacatkan lagi cerita yg dah terlampau cacat tu. Sorryla tuan director..Next time don't make malay horror movie if you are not equipped with the correct info from the correct person.

But the day was not ended with sour note... I make a cake supposedly better that anything in this world...they name it as better than sex cake...I call it BTS cake..(but sorry to say that my --- is so much better than this cake hahaha). Found it on momwhothink.com. This is how it looks like..

I have to show the cake diagram like this so that you know what's inside my BTS cake. Sure it's yummy, moist and as usual, very easy. I used only a premix butter cake, instant pudding. Pejam mata pun boleh..hihi.  Sorry for the cakar ayam drawing..i'm not a trained artist. My ultimate aim is to make V8 cake.. an 8 layer cake..fuhh..(but mind you it's not like sarawak layer cake) . Till then...bye..

my own cheesecake?

Unbelievable! never thought that i could produce a cheesecake on my own...after so many years depending on secret recipe, finally the tie is severed..hip hip hooray!!! the funny thing is that i never search cheesecake recipes on the internet...never. what i had in mind was that this superlicious cake is impossible (for me)...hmm it turns out to be the easiest cake to make, no hard and fast rule, not beat-until-fluffy kind of thing except for the cream cheese that has to be beaten until soft and creamy. Now to my beloved sisters who constantly encourage me (by testing my products so excitedly)  here's the recipe and the how-tos:-


Yeayy!! my first cheese cake. Baked Cheesecake 

Ok ok the ingredients and methods are:-

Prepare baking tin. line with aluminium foil
200g digestive biscuits (crushed and mix with 2 tbsp sugar)
113g butter melted and pour into the biscuits, mix well 
Pour into the pan and flatten it. This is the base of the cake. Bake for 10 min 180degree 


For the filling:-
250g cream cheese (room temperature)
1/2 cup sugar
1/4 cup milk
2 eggs
lemon rind 
1 tbsp lemon juice
1/2 tsp vanilla
dash of salt

- Beat the cheese until soft then add in other things gradually. lastly add in eggs one by one. Mix well. Then pour into crust and bake for 25 mins.



Topping:-

1 cup sour cream
2 tbsp sugar
1/2 ts vanilla

Mix well and spread over the cheesecake and bake for another 10 mins. 
Chill for 5 hours or more before serving.

Isn't that easy? Once you make it, you'll always want to make another one..
I did not have topping on my first cheesecake. The second one, was the perfect one but unfortunately not captured on my camera..And the third one I invented my own blueberry cheesecake..hihi actually if you just add in whatever you want to add for the topping, it will be ok...i mixed blueberry into the sour cream mixture and baked for 10 mins. Walla! here's my blueberry cheesecake!



One life's great reward..when you come home and cheesecake is waiting for you...yummyyy..

FRUITS FRUTTY FRUITTIES!!!

I love fruit, any kinds of fruit..local or imported fruits. Durian season together with rambutan, mangosteen, langsat, cempedak was my favourite time. It brings a lot of fond memories. I remember waiting for the durian to fall from the tree..bagai menunggu bulan jatuh ke riba (like waiting for the moon to fall on my lap).. Me and my sister did all sort of activities like singing dancing playing batu seremban, tutup botol (bottle cap) .. though we have to watch out for the strayed wild boar.. Lucky not one passed by.. After few hours of waiting we heard a not so loud "Bhupp" the sound of something falling to the ground. We rushed to the place where we thought the sound comes from and WAH! There we found a small durian covered with dried leaves and what a joy it brings to us..  hmm...hope my children have the chance to experience this pure excitement..

Ha! speaking about fruits, I've made an easy fruit tart for my sister's engagement day. Very simple yet so fresh and yummy..the base is a round shortbread, layered with a fresh mascarpone cheese and heavy cream. The choice of fruits depends on our palate..some like sweet fruits, some like it to be slightly sour.. You may want to try make one for you...Here is the recipes:-

Shortbread Crust:
1 cup (130 grams) all purpose flour (tepung gandum biasa je)
1/3 cup (35 grams) confectioners (powdered or icing) sugar
1/8 teaspoon salt
1/2 cup (113 grams)coldunsalted butter, cut into pieces
-just mix them together until it forms a clump, then press on your greased tart pan. can use big one or the mini one..
-then pierce the bottom with fork, covered it and place in the freezer for 15 min.
-then bake for 13-15 mins until golden brown. 

Cream Filling:
1/2 cup (120 ml) mascarpone or cream cheese
1/2 cup (120 ml) cold heavy whipping crea(35-40% butterfat content)
2 tbsp (30 grams) granulated white sugar
1/2 teaspoon vanilla
(One day I wanna add in durian flesh esp for my hubby..hihi)

Spread the cream filling and fill with any fruits you want like mango, kiwi, berries, peaches, mangosteen... yummynyaa.....

Aisyah's Birthday Cake

All of us are still in Raya mood. But on 16.9.2011 I made a red velvet cake for baby Aisyah's 1st birthday and also Pineapple Upside down cake... we call it "pesta kek" haha..

And we also had a very entertaining evening with Wu Xia, our hero donnie yen a.k.a Ip Man.. superb.. Last but not least, I realize for a thousand time that the time spent with family makes us closer together..for better or for worse...

Kitchen Aid for me..

Alhamdulillah... finally i got my dream stand mixer.. Now no excuse maa. every other weekend must at least produce 1 beautifully baked cake with perfect frosting or choc mousse or cupcake or so on and so forth..fuh what a plan! And for info, I bought it not because i want it but i NEED it ok.. when my old hand mixer started making funny noise then i knew that its time... yeayyy!!

This  is how it looks like but the colour a bit different. I'll take the real one when it comes out from the box ok..hehe..

How cooking can make you healthier...

I love reading "how-tos" because it gives me ideas and better knowledge of the subject that interest me... For example just now i read about "what makes a face beautiful"..No need to go further into that topic because you can read from yahoo webpage. Now back to the title of this post.. I find that cooking can make us healthier because before we cook, we have to think what dishes to cook for that day... is it balanced healthy and nutritious...if it is new recipes, then more thought put into it... So we exercise our brain everyday.. wow! Just remember that our brain cell or neurotransmitter will die everyday if it's dormant. Check if what we are doing are only routines.. Routines are automatic.. It does not utilize our neurotransmitter.. Don't let our brain die in vain.. Let's do some serious thinking ya!

Hah let's think what to cook for buka puasa today.. hmm.. tick tock tick tock.. gotcha! I'm thinking of my mom's special fried chicken... and prawn masak lomak and long beans... slurrppp.. nyaman tok (terfollow org sarawak pulak) hehe...and for dessert, i'll do kuih gulung inti kelapa durian (tiru my mom juga).. wallaweiii.... bernasnya idea ni.. smiling and felling proud with myself... :-))).. Now time to go home! Bye  bye..

Chocolate fondue on shakira's birthday...

Hello everyone! Today is my youngest baby birthday. Time flies so fast huh. Now she's 5 and getting smarter prettier and cheekier :-). As usual, I got my brain raking for an idea to prepare interesting dish for our dinner tonight. So i decided to make my signature dish which is sweet & sour kerapu, stir fry mix vege and chocolate fondue for dessert. This choc fondue is my kids favorite. It's very simple..(pejam mata pun boleh..hehe) I managed to take pic of my fondue.. maybe it's not that attractive and inviting but i tell you...(hmm i couldn't post the pix here right now..maybe later)

Ingredients

200g chocolate bar
60g butter
2 eggs
1/3 cup brown sugar
2 tbsp flour

Method

1. Use small pan and melt the choc bar over simmering water
2. Put butter, sugar, eggs and flour in food processor and blend thoroughly
3. Pour the cooled choc into the mixture and mix until smooth
4. Put the mixture into 4 ramekins
5. Bake for 15 mins in 180 degrees  oven.

The result would be slightly crusted choc cake but gooey on the inside.. and it's an absolute yum! You can have it with fresh cream or fresh fruit like strawberry or orange to even the rich chocolaty taste.

Shopping Frenzy!!



Our second day in Langkawi was full of shopping activities. We started off with Dataran Lang where everybody was so eager to take some pictures with the biggest eagle in the world.. then to the Legend Park but before that tried roaming the jetty point shopping mall... bought some souvenirs at the shop called Naple. An interesting shop where you can find handmade crafts like handbags, jute shopping bag, musical instrument like gamelan, guitar, flute, small drum or rebana and lots of deco stuff... Eric Leong suka la ni... And guess what! I bought takraw ball for shamin and gamelan for eisya so that she can play and shauqi and tatila will dance to the music... Kuda Kepang dance suits the sound of the gamelan.

After that we proceed to Gamat Nusantara where all of us I think bought some gamat products as the tagline says (Gamat Nusantara..Jangan Pulang Tanpanya).You can test the boiling gamat oil. It was hot but it won't burn your skin (it's true). And I bought Bedak Sejuk just because i remembered how my late grandmother used to make her own bedak sejuk. Al-Fatihah to Uwan...

After that we headed to Kuah for S.H.O.P.P.I.N.G!!! That's what Langkawi is all about right... So engrossed in this activity until nobody remembered to take pictures. Hmm I think that is a perfect reason or excuse to visit Langkawi again...So as usual, chocolate and chocolate and chocolate...we bought most of the chocolates from Haji Ismail Store (you can see Halal certificate for the chocolate sold in the shop). Hmmm what a satisfying indulgence... Ha! I found this poem about chocolate that makes my mouth water...It's called "Chocolate pleasure"

We  shopped for about 3 hours at Kuah and then continue to Idaman Suri for another round of shopping.... Felt like loosing my leg...Then we had western dinner at a small restaurant called AO Corner nearby Pantai Chenang area... Everybody was in high spirit, well I think because we all get the "S" vitamin lor... With that high spirit and full tummy, we surf the Pantai Chenang night market for night shopping session... I found one little spa which was still open at 11pm and ended up having a full body massage Malay style.... My body desperately need a good relaxing massage to ease the pain and soreness I felt after many kilometers of walking... from 1 shop to another...hehe..

The next day, believe it or not, everyone of us went for a final shopping at Kuah which is nearby our hotel... Ha! that was not the final one.... we stop at Beras Terbakar one more time before heading to airport. Kot la terlupa beli kain batik utk mak mentua ke.. :-). Then the last agenda was having lunch at Jom Ikan Bakar. Perghh thumbs up for the fresh squid, terubok and gerut2... plus the reasonable price...the only thing they need is fan...

There goes the shopping episode in Langkawi...It also reminds me of one article saying that nowadays Malaysians are spending their money after saving for so many years especially when the economy was down around 2008... True? Well I don't know...And with that I rest my case and my chocolate.. Wassalam...

Langkawi Travelog

Salam to all....



Our first day in Langkawi - we had a very adventurous and exciting (tiring and exhausting) day in Langkawi. I wanted to strictly follow the itinerary as prepared by me but "Kita hanya merancang, Allah yang menentukan".. First, we planned to take a dip at  Tanjung Rhu beach but the beach was quite unsafe and unpredictable. My mom said it looks like a wok. The current and wave could pull us further into the sea. Scary kan. So we agreed to just snap a few pictures as memento and my kids as usual played with the white sand and Eisya collected few seashells for her art project..


Then we proceed to the jetty nearby the beach for the mangrove tour. Basically it's a tour by boat through  the mangrove forest, bat cave, crocodile cave and eagle feeding. We finished it off by having our lunch at the Thai seafood floating restaurant. Marvelous food because the seafood are the freshest. Shamin get to see his favourite pet "Baby". A baby stingray which has no teeth and eats from his hand. Very interesting. Hmm I really love this island...


 This is bakau trees. If you look closely, you can see a beautiful snake resting on the branch.... The tour guide said that he can easily find the snake because it will rest at one place for about 1 week, shedding its skin. Ooo that's why laa...

Then we went to Beras Terbakar (coz the cable car plan scrapped again because our ticket that we bought earlier can only be used at 5pm - 7pm) I still like it coz I can go SHOPPING!!! After using up my energy to walk and bargain at the shops there, we went back to the cable car and oriental village for the ride. I had no idea that the queue would be I think 1km long (they managed to make it looks like just a few minutes waiting because the queue was like a perfect maze zigzagging its way to the cable car station).And until now I still do not understand why they allocate the time for Malaysian ride at 5-7pm. You can ride at anytime you want at RM30 but if you can wait until 5pm, you can get the ticket for just RM15. Please somebody give me the rationale in doing so... Anyway, we had fun jugalaa... could take some pictures up there..



I think it's the Mat Chinchang frog. I found it when I accompany my daughter "shishi" inside the toilet on top of the mountain. Katak gunung la ni...cantik kan?

Our last stop for the day was at Kuah. There's a night market in Kuah every saturday. But we decided to have dinner first. We stop at Noor Tomyam Seafood just beside the Kuah bridge opposite the Langkawi Baron Hotel. Why do you think I mention the name of the stall with its exact location? Is it a good or bad one? Let me tell you.. it is a very very BAD and put a shame to the bangsa Melayu.... The waiter proudly said that they are not in speaking term with the stall next to them. It came out because i wanted to order kerang rebus since it's written in big bold signboard in front of the stall that they are selling kerang rebus.  They did not have cockles tonight.So I decided to order from the stall next to them (no name stall). And sampai sudah no kerang rebus for me because I think they don't sell the food to the customer sitting at their "enemy" stall. Then to make my night worse, they wrongly calculated our bill by RM20. Hish! Spoil betullah...Hmm sampai bila la bangsa kita ni nak maju.... Hasad dengki tak habis2.... Ni dah marah la ni...

To cool my temperature down, I had a brief visit to the night market... Bought somtam... it's a Thai dish with the main ingredients are young and raw papaya, thinly shredded, gula nira paste, fish sauce, lime juice, crispy salted shrimp (udang geragau), bird chilli, garlic, roasted peanut and kangkung as ulam. I bought also the pulut durian... have not tasted it yet. I think, I'll do that in the morning... Now time to sleep and give my legs some rest for tomorrow's adventure....till then...bye..

Healthy Breakfast Anyone?

Salam and happy new day to all my friends...

Have you all heard of a breakfast known as "Healthy Breakfast". I prepare it every morning for me and my husband before we go for work. I just popped in 1 green apple, 4 tbsp fresh plain yogurt, 200ml low fat milk or fresh milk, 2 scoop berry protein powder, 1/2 packet of low fat positrim drink mix, 2 tbsp fortified beverage lemon lime, a multivitamin and a few other vitamins into my blender and walla!. Super easy, delicious and nutritious. Ha! Ramadhan is approaching. This drink is perfect for sahur meal. Just take this and you'll be energetic throughout the fasting day. Happy trying!

I cooked Gulai Tempoyak Pucuk Ubi Racik when i was 12..

Salam to all readers... I start salivating when I mention this dish. Gulai Tempoyak Pucuk Ubi Racik.. my favourite forever and ever...though my other half won't even try it (even if i threaten to jump..hehe). I learned how to cook this special dish since i was 8 or 9 I think and I finally cooked it myself (because my mom was not at home...working) when I was 12 years old. And it turned out pretty well. We had it with hot rice and fried fresh water fish (ikan sungai which i don't know its real name which my father got it from fishing at the river just behind our house. But quite sadly, there are fewer fish in that river nowadays. Hmm.. environmental issue comes in... better discuss it in a different platform la kan... So to all of my brothers and sisters, I invite you to share your memorable and enjoyable cooking experience so that we can look at it with warm heart and feelings and we can exchange good recipes and useful tips to enhance our cooking skill and experience.
